Banana Cake

 This cake is easy, everybody loves bananas, plus it’s a great way to use your very ripe bananas  so… there is no excuse for not trying it. Enjoy!


125 gr. butter

½ cup of sugar

2 eggs

3-4 ripe (or very ripe) bananas  sliced into small pieces

1 vanilla

1 teaspoon of baking soda

2 tablespoons of honey

11/2 cup of flour


In a bowl, we beat well the butter with the sugar. When the mix becomes white we add the eggs one by one and we continue to beat them. We add the honey, the vanilla and the soda by continuously beating them. We add the flour, we continue to beat a little more and when the mix becomes thick, we add the bananas. We stir well and pour the pastry into a baking  form well buttered and floured so it won’t stuck inside. We bake in a preheated oven for 45 minutes at 180 C. If the cake has a little moisture, that is welcome and it is because of the fruit.

Enjoy after lunch with a cup of strong coffee.
